Tuna Salad

I recently made an old favorite that we haven’t had in quite a while. What did I make you ask? Tuna salad. Nothing special, you say? I beg to differ. Mine is not quite the usual recipe. I refrigerate the tuna before I make it still in the cans so it is cold and ready to serve right away. You don’t have to do this, but it is best to refrigerate for at least a couple of hours after making it if you don’t so everything gets cold and the flavors have a chance to mingle.

Karen’s Tuna Salad

6 cans tuna packed in water (not oil)
1-1/2 cups diced celery
1-1/2 cups diced green pepper
sweet pickle relish to taste
Light mayo to creamy texture

We (my daughter and I) figured out it doesn’t matter how many cans of tuna you use, the magic ratio of crunchy green stuff to tuna is 1/4 cup each of celery and green pepper for each small can of tuna you use. My daughter and I disagree on what type of relish needs to be used, she likes dill relish, and I can’t imagine it without sweet relish.

We drain the water off the tuna so it doesn’t make the final product all watery. I usually dice the celery to 1/4 inch or smaller, the tuna is fairly smooth and not as chunky as chicken for chicken salad would be, so I think it works best to have the veggies diced small, but you do what you want. Some times I get lazy and hurried and cut them bigger just to speed things up. I usually mix it all up in my 8-cup Pyrex glass measuring cup.

Stir in the light mayo and relish until you get the right combination of texture and taste.

Then I store it in small, single-serve plastic containers about 1 cup in each. This makes it quick to grab a container when packing lunches. We just take the bread or wraps we want to use with the tuna along in a separate bag or container.

We enjoyed it so much we ate it all up before I could take a photo to show you how yummy it looks, but if I remember to take a picture the next time I make it I will add it in. Obviously, you can use the tuna from a pouch or larger cans, but the small 5 or 6 oz cans are usually what they sell at Aldi, so that is what I use. So just adjust the recipe to fit the amount of tuna you are using.

Well (Five Minute Friday)

Sometimes we don’t just want to do something well, we want to hear someone say, “Well done.” We spend our lives trying to live up to the expectations of others. We do our very best in an effort to gain approval or praise. I was raised by parents who expected nothing less than our best effort in everything we did. There was no pressure to be the best among our peers, but to be the best we could be. I tried to raise my own kids to compete only against their own best effort. There was no need to feel bad if they didn’t win at swimming, all they needed to do was continue to improve their efforts and beat their own best time. To show improvement was all I asked. When the kids graduated with a four-year college degree in just four years, I was so proud of them. They accomplished something no one on either side of our families had done since their grandfather. Well done, I am so proud of both of them. There are plenty of college degrees in both mine and hubby’s family, but we don’t all get the chance to complete the degree in the time it is meant to take, it is important that they completed at least that much higher education. We expected it of our kids from the day they were born. We think they have both done well and know they will be able to stand on their own long after we are gone. Well done, you have done well and for that, I am so proud, grateful and pleased. Thank you both for being so well behaved. It is an honor to be your parent.

My Top Tip for Raising Smart Kids

One day when our tv and internet were out, I had an interesting conversation with the cable guy, and no, his name was not Larry.

He noticed all the books and bookshelves in our house and saw the kids’ tassels on the mantle. He says you must have really smart kids. Well, yeah! I wouldn’t have it any other way. My mom-side kicked in and I began telling him about how important it is to read to your kids and let them see you reading for pleasure. Newspapers, magazines, books, cereal boxes, comic books, it really doesn’t matter. As long as you choose to read and they see you enjoy it, they will imitate you.

There was a time when I didn’t think kid #2 was going to be a reader and it kinda freaked me out. She seemed a little distracted when we were reading a book to her and was more into drawing and artsy stuff, even as a preschooler. We just kept reading with her and to her and eventually, she was lured to the bright side with the rest of us. Now the entire family reads voraciously. Or at least we all did while we were living under the same roof. To be fair the kids are grown-up adults and rarely pay attention to us old folks anymore, so I really have no idea what they do in their free time now. Some things are probably better not known.

But seriously, it made all the difference in the kids’ success in school. Readers are succeeders!

Reading is the top tip I could share with you to help you raise smarter kids. I’m sure there are a ton of boring statistics to back me up here. Fortunately for you, I will not take the time and effort to dig them up and spit them out for you here. I trust you know how to Google and are fully capable of finding the info on your own.

It is never too late, save yourself and get busy, start reading today! If you think you don’t like reading, you just haven’t found the right books yet. Keep looking! Ask friends who have similar likes and dislikes what THEY like to read. Ask the local librarian for recommendations. I bet Google and Siri could even recommend books for you.

Name (Five Minute Friday)

The prompt this week is name. Your name is everything. Your name is your badge of honor. No one wants their name to be dragged through the mud. I have wondered several times if I would use a pen name if I ever got a publishing contract. Part of me thinks no way! If I get published I want my name on the book cover. The other part of me, the not-so-confident part, says yes, a pen name would make it less obvious that it was me if the book was a huge flop. I’m still undecided, but then at this time in my writing life, it is really a moot point.
Another thought came to mind when I saw the prompt. You know how you have to give the person a name when you go to a restaurant and have to wait to be seated? I always give a different name, because our last name is too much trouble to spell and pronounce/sight-read. I usually give our daughter’s first name, even when she isn’t with us because it is easy to spell and say and uncommon enough that nobody else is likely to be using it. It works as long as we don’t forget which name we gave at the hostess stand.

Names are important because they are our way of identifying ourselves. What does your name say about you?

25 More Facts About Me

Today is the 5th Thursday in May, so that means it is Blogger’s Choice. So I thought you might like to learn a few more things that you might not have known about me. So here goes:

  1. I have been hooked on Genealogy since the 5th grade
  2. I have coded hundreds of websites using HTML and Notepad
  3. I love solving problems and finding more efficient ways to get things done
  4. I love to read books (I usually read over 150 books a year)
  5. My new favorite way to read is listening to audio-books
  6. I’ve been sewing since the 2nd grade
  7. I named both our kids (with approval on the names from Hubby)
  8. I can avoid most sweets unless there is pumpkin or chocolate involved
  9. I have hand-fed wild squirrels (and have the YouTube videos to prove it)
  10. I can’t dance, but I still try
  11. I struggle with self-confidence
  12. I am the 2nd of 4 kids, the middle girl (I grew up believing there was nothing special about me)
  13. I have never tried smoking anything, ever
  14. I have had less than 8 oz alcohol my entire life (most of that was due to spiked blue wedding punch)
  15. I used to be a model (hair model for SuperCuts, think free haircuts from trainees)
  16. I once broke a bone in my foot then broke 4 more because I kept walking on it and had no clue it was broken
  17. I took Spanish from 5th through10th grades and even a semester in college but never learned to speak it
  18. I enjoy playing Pokemon (the video games, not card game)
  19. I am a low maintenance spouse (cheap to keep)
  20. I have never had a manicure or pedicure by a person that was paid to do the job
  21. I used to have long hair
  22. I can no longer get permanents in my hair (it makes my scalp peel and gives me a chemical burn)
  23. I am an introvert
  24. I slept in a Honda Civic on my wedding night
  25. I once played a yellow candle in a school holiday play
